1、袋内的泡菜汁别浪费,倒入锅内煮可使汤中的泡菜味更浓郁。O5L]J[

2、清鸡汤和泡菜都有咸味,调味时不宜再加盐,只需加点生抽提味便可,否则会过咸发苦。l-Yn?&C xw4SD Q
3、不同牌子的辣白菜,其酸辣度不同,烹调前可先试味,如果辣白菜较酸的话,就要加点白糖来中和酸味。

4、五花肉应选肥瘦相间,肥肉较少的,应先将五花肉煸出余油,再用来煮泡菜汤,否则成菜会过于肥腻。
