清蒸鱼其实很简单,关键就在于火候的掌握,生了当然不行,熟透了,肉就太老了,也不好。还有一个就是怎么去腥的问题。P5j)atdK `|#v:U

对于火候的掌握,一般一斤左右的鱼水开后上锅十分钟,关火焖上三四分钟即可。当然可以用筷子插一下肉厚的地方,若能顺利插入,就不能再蒸了。

对于第二个去腥的问题,第一用葱姜丝腌,第二当上锅后四五分钟的样子,打开锅,把盘子里积的水迅速的倒去。这是我在网上看到一个老手这么做的,试过后挺管用的。

1. 鱼段上横着拉几刀,抹上盐,葱姜切丝,盘子下面垫上,上面撒上,缝里塞上。Z/wmG1xc

2. 利用腌鱼的功夫可以弄些好看的葱丝。用香葱的葱叶,洗好后用手按着一端,用牙签划几下,一丝丝的。然后放入清水中,它就自然卷曲了。这样弄一堆最后放在鱼上时很好看的。qCoo,Z

3. 至少腌15分钟,然后水开上锅,水开后四五分钟把盘子里的积水倒去,重新放在锅上。10分钟左右基本应该可以了,可以用筷子插一下,不行就再焖上几分钟。而后取出后把原本放在上面的葱姜拿掉。

4. 把泡在清水中的葱丝取出放在鱼上,然后浇上生抽。n+oIN#v;p8z7YK
